Ingredients
2 Cups whole rolled oats
1 Large Granny Smith apple, diced
2 Scoops vanilla whey protein powder
2 TBSP raisins or sultanas
3 Whole eggs, beaten
2 tsps baking powder
1 tsp cinnamon powder
1/4 tsp sea salt
Method
Pre-heat oven to 180 degrees celsius
Prepare a muffin pan with greased muffin liners (paper or silicone)
Place the diced apple on a bowl and microwave with 2 TBSP water for a minute to soften.
Process the oats in a blender or food processor until it resembles a rough flour.
Add the softened apple and process again until well combined.
Pour the mixture into a large bowl.
Stir in the eggs, whey powder, baking powder, salt, cinnamon and raisins.
Bake for 30 to 40 minutes.
